Opinion of what I should do about college?

So I am a rising 11th grader who is very passionate about cooking. I have been working in restaurants for 2 years and have done close to 15 catering jobs this past 6 months. My mom says she wants me to have a college education but personally I know that I am going to be doing something back in the kitchen so i do not think that I need English, math, etc because I am already going to the best High School in Mississippi with pretty good grades. If I did have to go to college what do y'all think of me working in restaurants for a year out of High School either in Napa Valley or Chicago and then making my decision about college based on living by myself at 19 years of age. I would rather take the money put aside for me for college and either invest it or travel the world learning different cuisines and cultures to help me in the very near future. thanks for the opinions and hopefully they will help me in my decision!
